The wine region of Hilltops is located in the region of Southern New South Wales of Nouvelle-Galles du Sud of Australia. Wineries and vineyards like the Domaine Gundog or the Domaine Hungerford Hill produce mainly wines red, white and pink. The most planted grape varieties in the region of Hilltops are Cabernet-Sauvignon, Tempranillo and Nebbiolo, they are then used in wines in blends or as a single variety. On the nose of Hilltops often reveals types of flavors of non oak, earth or microbio and sometimes also flavors of oak, spices or red fruit.
In the mouth of Hilltops is a powerful with a nice balance between acidity and tannins. We currently count 66 estates and châteaux in the of Hilltops, producing 182 different wines in conventional, organic and biodynamic agriculture. Its precise origin is unknown, it has been cultivated for a very long time in northern Italy. It can be found in Switzerland, Australia, Argentina, ... in France it is almost unknown. It should not be confused with the Corvinone, another Italian grape variety. It should be noted that the Corvina is related to the Rondinella and the Refosco dal Peduncolo rosso.
